Five years ago, 3/19/2020, I shared my technique for making a thick, delicious yogurt following the directions of Milwaukee cardiologist, Dr. William Davis. www.hometrainingllc.com/blog/do-it-yourself-yogurta-culture-for-health At the time, I used my Rival Roaster oven to ferment these quart sized yogurt cultures. A few years ago I purchased the Luvele machine and it has perfected the process. Currently, on the Luvele website they are sold-out of this popular unit. There is a keen interest in restoring the gut microbiome which is key to a healthy immune system. Antibiotics, stress, seed oils, alcohol, processed foods, and more all damage the gut microbiome but simple strategies, particularly increasing fermented foods, can help to replenish healthy gut bacteria. In addition to physical health, good mental health also has links to a healthy gut microbiome. The basic ingredients necessary for this creamy yogurt include a quart of organic half & half, 1-2 TBS of inulin fiber (I use the NOW brand, link pictured and active below), and L-reuteri probiotic (I use the BioGaia brand, link pictured and active below). I suggest listening to Dr. William Davis describe his technique. In the past few years he has developed his own brand of L-reuteri (versus the Bio Gaia product) that he routinely uses in his yogurts. His most recent book, SuperGut, details a variety of recipes beyond his popular L-reuteri yogurt. My original blog, linked above, from circa 2020 provides step-by-step directions.
Recently, while researching yogurt brewing strategies on a helpful site, www.facebook.com/groups/1103455587344510/ this video from Dr. Malhotra, a world-renown cardiologist seemed poignant. He had been diagnosed by a gastroenterologist with particularly low levels of Bifidobacterium. It's fascinating how different gut bacteria play a role in our energy, mood, sleep habits, skin health, digestion and more. While Dr. Malhotra contributes his change in gut microbiome to a vaccine, many note gut imbalances particularly related to antibiotic usage. In my family alone, we have relied on antibiotics for a variety of circumstances and I always look for opportunities to add a dollop of yogurt to my kids' smoothies. Now that they are grown, I can only encourage them to make choices that strengthen their gut health. Pre and probiotics can be found in a variety of foods including milk kefirs, fermented foods like sauerkraut and kombucha, and even green bananas are an excellent source of prebiotics. Recognizing the role of fermented foods to our overall physical and mental well-being may play a significant role in our health journey.
Dr. Aseem Malhotra: "I was pretty okay after the initial vaccine. About a year and a half after the vaccine, I developed psoriasis, an autoimmune condition linked to that depression, and I wasn't sure what was going on. And there's a brilliant doctor in Malibu, a very well known established gastroenterologist called Sabine Hazan. And she did some published research, which is pretty extraordinary and a bit scary, but we need to talk about it, is that she found that, three years after taking the COVID vaccine, a very important bacteria in the gut called Bifidobacteria. It's part of a very important part of the gut microbiome. It's a good bacteria. After three years, went down to zero. Now why that's important is that bacteria is very important, for health. It's important for producing neurotransmitters like serotonin. So a lot of people might be suffering from anxiety, depression because of a vaccine they had two or three years ago. She called me up and said, Aseem, you have the exact signature of someone who's vaccine injured because your bifida is zero. And I've had this resistant problem for now, you know, coming up to a year and a half. I've still got depression. It's mild, but it's still debilitating at times. And I see other doctors I speak to are saying they're seeing explosion of autoimmune conditions."

If you want a deep-dive into the world of gut health, Dr. William Davis has been an amazing, and local resource for me for nearly 15 years. His books Wheat Belly, Undoctored, plus SuperGut support an active lifestyle that relies on unprocessed foods, movement, and a few key supplements.
