MARRIAGE: Ron and I survived the Green Bay half-marathon in good style...at least from a marital stand-point. I had blogged a bit for the Green Bay Gazette prior to the race and noted my hope that a common goal would lend itself to greater harmony in our marriage. Training had its ups and downs much like marriage and the same could be said of the 13.1 mile race. However, at the finish line, or more precisely at mile 12.8 while "running" (imagine more of a super-slow shuffle) I caught up to Ron who was on his last leg as well. We ran out of Lambeau Field together and crossed the finish line at precisely the same time, 1:58. We never trained together and we certainly did not intend to race together, it was simply fate that found us together at the end. (imagine blue birds singing).
RUNNING: It was a beautiful day to run and I was so proud of my West Bend friends that made the trek to Green Bay and finished with stellar times. Terri Bodden, Director of Fitness at Pleasant Valley Tennis and Fitness Club, completed the half in an elite time of 1:30...basically averaging around 6 minute 40 seconds per mile. Terri is a running coach and personal trainer who leads beginner to advanced running groups. I hope to spend time running with her in the near future as her power and endurance is inspiring.
INSPIRATION: Other husband and wife duos, Ric and Amy and Jo and Kraig also completed the half-marathon together. Jo has an 8 month old baby, full time job, plus three other children so you can imagine the effort necessary to prepare for an endurance event in the midst of a hectic schedule. Kraig has dedicated himself, over the past 4 years, to improving his health through marathons, half marathons and triathlons demonstrating a significant improvement in his speed and endurance. One of his employees, Scott, has lost over 100 pounds in 28 months and completed the Green Bay race at around 1:43...a remarkable time for anyone much less a novice runner. This is just a small smattering of the incredible success stories which surround anyone participating in an endurance event. CHEESY CHICKEN ENCHILADAS: My North Carolina cousin facebooked me today with a message requesting a family recipe: Cheesy Chicken Enchiladas. Rather than just share it with Jenn I thought I would blog it for all my friends to enjoy. This recipe is originally from a Homestead, FL neighbor, Wilma.
Cheesy Chicken Enchiladas:
2 c cooked chicken breast (chopped)
3 tbsp salad oil
2 lg. onions, chopped
1 pkg (12) corn tortillas
2 cans (10 oz) enchilada sauce
2 c. plain yogurt
1 lb. Monterey Jack cheese (strips)
Shredded cheddar cheese
Heat oil in fry pan, add chicken, onions and peppers. Cook until soft. Set aside. In fry pan, blend yogurt and enchilada sauce and heat. Turn heat off. Dip tortilla in sauce to soften, place tortilla in baking dish and spoon some onion, pepper, chicken mix and strip Jack cheese into tortilla and then roll. Repeat with all 12 tortillas until they are arranged close together in baking dish. Pour sauce over them. Sprinkle cheddar cheese and bake at 375 degrees 25 minutes.
PILATES I: While cooking, hold yourself up from your powerhouse. Feel your feet centered on the floor and avoid sinking into your hips and knees. Defy gravity, avoid favoring one side, and maintain a sense of lift and good posture that originates from your center.
Pilates II: I am looking forward to teaching Pilates mat classes at Pleasant Valley Tennis and Fitness this summer in Jackson. Please contact PV Fitness or Terri Bodden if you are interested in participating in a 7pm Wednesday mat class beginning in early June. The more the merrier and no prior Pilates experience is necessary. We will find our core together!
