This morning after mat class I ran a few errands and came home inspired to create healthy "pick-me-ups." Mint leaves (from my leftover Sand Salad ingredient list), cucumbers, and lemon slices create this refreshing hydration drink. I used distilled water for purity as compared to our usual city tap water. The fruit, veges, and mint diffuse subtle flavors making this a perfect fruit juice option without added sugars.
Celery, green apple, and cucumber combine for this salad in a jar. Generally it is advised to drink your green juice immediately after juicing, however the mess and clean-up involved with my juicing efforts dictate I juice just once a day. The simplest option is also often the most advantageous as you actually do it...rather than just thinking about it. Make a few different juices when time permits and store them in the fridge for later enjoyment. Although the potency of the vitamins and minerals are lessened after cutting, juicing, and storing; I still believe the green juice nutrients are more valuable to my cells than an afternoon soda.
I purchased a couple of grapefruit nearly a week ago and hey were still staring at me from the fruit bowl this morning. Rather that eat them or toss them, I chose the option of juicing them. It was all I could do to save a bit for my son this afternoon. Pure grapefruit juice gave me a rush of endorphins (AKA natural fruit juice sugar :). The other jar is a combination of celery, carrot, and green apple. Sometimes I imagine my cells throwing a party when I actually indulge them in meaningful nutrients. These combinations give your body potassium, vitamin A, magnesium, and iron. I found a handy chart that describes in detail the benefits.

I have heard it said, you can tell a lot about a person by the condition of their feet. Being that I often teach barefoot I sometimes find myself rather self-conscious of my lack of foot-appeal! My feet are technically part of my work uniform and deserve attention. Thus, I took action after mat class today, an indulgent but necessary investment in my feet. In the process I found inspiration thanks to my professional nail artist, "T." "T" works at the new Elegant Spa and Nails (near Sendiks and Planet Fitness on 18th Ave/Hwy 33). This young man, a recent transplant to the city of Grafton, shared with me his enthusiasm for yoga, fitness, nutrition (even quinoa!) and his recognition of the mind/body connection. Together we talked about the excuses we make when it comes to exercise or nutrition habits. Believe it or not I had a lot in common with this 20 something man from Vietnam! We both use the excuses of: 1) I am too tired to exercise. 2) I pulled my hamstring. 3) It is hard to cook for only 1 person. 4) I'm still getting adjusted to Wisconsin! 5) Organic food can be expensive. 6) It's so hard to exercise at home. 7) I don't have time to pack a lunch for work.
Anyhow, my point is, we can be very different in our culture, birthplace, work, religion, age but we're really not all that different on the inside. 1)We both feel the calling to care responsibly for our health. 2) We appreciate that a massage, pedicure, acupuncture, yoga class can do wonders for our physical and emotional well-being. 3)We acknowledge that in all circumstances we are responsible for the energy we bring. 4) We are responsible for the excuses we make. 5) We agreed food can be great medicine or toxic poison to our bodies. 6)We also agreed that we each can be a spark of inspiration for a friend, family member, or in this case even a stranger.
